Milch Reis (Rice Pudding)

Notes: This tasted just like I remember it from Germany. My first Sunday in Germany all 3 sets of missionaries were invited to the ward mission leaders home for lunch. I remember just learning how to eat with my fork in my left hand. But in the area, Solingen/Wiesbaden, it is called Bergisches land. And one of their typical things is a Bergisches Kaffeetaffel. With that, coffee, or Karo and tea for LDS homes, was served. Waffles with rice pudding on top were a must. Then you could have cheeses, and meats, and other breads as well as some fruit. I loved it! 

Ingredients
  • 3/4 cup Arborio rice (or sushi rice works well), rinsed
  • 6 cups whole milk
  • 1/2 vanilla bean, split and scraped or 2 teaspoons pure vanilla extract
  • 1/2 cup sugar
  • Pinch of salt
  • 1/4 cup heavy cream, optional
Directions
  1. In a medium saucepan, combine rice, milk, vanilla bean and seeds, sugar, and salt. Bring to a boil over medium-high heat; reduce heat and simmer, stirring frequently, until rice is tender and liquid has absorbed, about 40-45 minutes.
  2. Remove vanilla bean; stir in heavy cream. Rice pudding may be served warm, at room temperature or chilled (personally I prefer it slightly warmed).

Hauswaffeln (German style waffles)

Notes: to be eaten with milk rice and possibly some fresh fruit on top

Zutaten:
250 g. Butter
175 g. Zucker
2 Paeckchen Vanille Zucker
6 Eier
1 Prise Salz
500 g. Weizenmehl
3 gestrichene Teeloeffel Backpulver
1/2 L Milch

Richtung:
Einen Ruehrteig herstellen
Das Fett darf nicht fluessig gemacht werden.
Der Teig soll dick fluessig vom Loeffel fallen.

Ingredients:
1 C butter
1 C sugar
2 tsp. vanilla
6 eggs
1/2 tsp salt
4 C flour
3 tsp baking powder
2 C milk

Directions:
Cream butter. (don't melt into liquid beforehand).
Add rest of ingredients except eggs to butter, mixing occasionally.
Beat eggs well in a separate bowl then add to rest of batter and mix.
The batter should be thick.

Wiener Schnitzel

Few foods are more evocative of Austrian cuisine than the humble Wiener Schnitzel, or Viennese Cutlet. As with many simple recipes, the quality of the ingredients are what will make or break your experience with this golden fried treat. Old oil or meat should be avoided and watch your schnitzel carefully, to avoid burning. Eating it fresh is also important.


Ingredients:

  • 4 veal cutlets (traditional) pounded to 1/4 inch thickness (about 5 oz. each) (you may use chicken or boneless pork chops, as well)
  • 1/4 c. flour (all purpose or brown rice)
  • 1/4 tsp. salt
  • 1/2 c. bread crumbs
  • 2 eggs
  • Oil or lard for frying (lard is traditional)

Preparation:

  • To pound meat thin you may want to place the cutlet between sheets of plastic wrap for easier washing up. Use a heavy, flat-surface pan to pound (not a meat mallet).
  • Pound the meat evenly to 1/4  to 1/5 inch thickness for best results.
  • Do not press the bread crumbs into the meat. The crust should not adhere completely, but form a loose shell around the schnitzel.
  • Make sure the breaded meat “swims” in fat. Contrary to instinct, the breading will take on less oil than if the meat is sticking to the pan. Also, the breadcrumb topping has a chance to puff up a little, and your clean up is easier. 
  • If schnitzel is not cooked all the way through, can cover with lid and allow to cook longer as well.
Directions:
  1. Set up 3 shallow dishes. Place the flour and 1/2 teaspoon salt in one and breadcrumbs in another. Beat eggs well and place in the third dish.
  2. Heat at least 1/4 inch of oil in the pan to 350°F.
  3. Working one at a time, dredge cutlets first in flour until the surface is completely dry. Dip in egg to coat, allow the excess to drip off for a few seconds and then roll quickly in the breadcrumbs until coated. Do not press breadcrumbs into the meat. Place meat immediately in the pan with the hot oil. Do not crowd the pan. Cook the schnitzel in batches, if necessary.
  4. Fry the schnitzel for on a lower setting (about 280 F) for about 5 min/side. You may want to swish them around a little with your fork to make sure they are not sticking to the pan. Turn them over once and fry until both sides are golden brown. Remove from pan, allow the oil to drain off, place on a plate with lemon slices and serve.

Also good with Wiener Schnitzel: cucumber salad and french fries.

Putenbrust in rotem Cocos-Curry (Deutsch)

Zutaten:

250 g Basmati reis
600 g Putenbrust
200 g Zuckerschofen
1 gelbe Paprika
100 g kl. Shitake Pilze
1 El. Sojasauce
1 Eiklar
1 El. Staerke
1 Knoblauchzehe
1 Stueck frischer Ingwer
1 kl. Zwiebel
4 El. Sesamoel
2 El. Currypaste
1 Dose Cocosmilch, ungesuesst
2-3 El. Fischsauce

Zubereitung:
1. Fleisch in Streifen schneiden, mit Sojasauce, Eiweiss und Speisestaerke vermengen, marinieren.

2. Ingwer, Zwiebel und Knoblauch wuerfeln. Paprika und Zuckerschoten waschen, putzen, in Streifen schneiden. Fleisch in heissem Oel anbraten und warmstellen. Zwieelwuerfel, Ingwer und Knoblauch im verbliebenen Oel anschwitzen, Gemuese dazugeben und kurz mitbraten.

3. Die Currypaste zufuegen und Cocosmilch angiessen. Kurz aufkochen mit Sojasauce, Fischsauce und Zucker abschmecken. Fleisch und Koriander blaettchen zufuegen.

4. Den Basmati-Reis nach packungsanweisung kochen und die in Oel geroesteten Erdnuesse untermischen.

Nam Pla

1 Prise brauner Zucker
1 Bund Kordiander
100 g ungesalzene Erdnuesse
1 El Sasamoel

Bayrische Semmel-knoedel (english)

Ingredients:
8 old baked hard rolls
3/8 L milk
1 small onion
3 eggs
20 g utter
50 g smoked bacon
1/2 bundle parsley
nutmeg
salt

1. Cut rolls into fine pieces. Warm milk and add rolls. Let soak for 30 minutes.

2. Melt butter. Brown small cut pieces of bacon in the butter. Cut the onion and parsley into small pieces. Mix in and let stew for a minute. Let cool.

3. Mix eggs, salt and nutmeg together. Then mix all ingredients together and mix well.

4. Wash hands with cold water and form mid-sized balls. Drop into simmering water and let cook for 20 minutes. Serve immediately.

Prep time 35 minutes.

Bayrische Semmel-knoedel

Zutaten:
8 altbackene Broetchen
3/8 L Milch
1 kleine Zwiebeln
3 Eier
20 g Butter
50 g Raucherspeck
1/2 Bund Petersilie
Salz
Muskat

1. Broetchen in feine scheiben schneiden. Milch kochen. Druebergeben. 30 Minuten ziehen lassen.

2. Butter erhitzen. Klein gewuerfelten Speck darein gelb roesten. Zwiebel und Petersilie fein hacken. Kurz mitschmoren. Abkuehlen lassen.

3. Zusammen mit den Eiern, Salz, und Muskat zu den Broetchen geben. Gut ischen.

4. Haende kalt abspuelen und mittelgrosse Klosse formen. In kochendes gesalzenes Wasser geben. 20 Minuten ziehen lassen. Sofrot servieren.

Vorbereitung 150 Minuten.  Zubereitung 25 Minuten.

Kartoffelklosse halb und halb (Deutsch)

Zutaten:
1500 g Karteffeln
Salz
170 G Mehl
Mehl zum formen
2 Eier
1 1/2 L Wasser
3 Tomaten (180g)

1. Kartoffeln schaelen, waschen. Die Haelfte mit Wasser bedeckt in einer Schuessel beseite stellen.

2. Die Uebrigen in einem Topf mit gesalzenem Wasser bedeckt 20 Minuten kochen lassen. Wasser abgiessen. Kartoffeln asudaempfen and abkuehlen lassen.

3. Rohe Kartoffeln auf ein Kuechentuch reiben und asudruecken. In eine Schuessel geben und die gekochten Kartoffeln daraufreiben.

4. 2 Essloeffel Mehl zum wenden abnehmen und auf einen Teller geben. Den Rest unter die Kartoffelmasse mischen. Eier unterruehren. Salzen.

5. Leicht gesalzenes Wasser in einem Topf aufkochen. Aus der Kartoffelmasse mit bemehlten Haenden Kloesse von 5 cm Durchmesser formen. In Mehlf wenden. In leicht siedenden Wasser 20 minuten ziehen lassen.

6. Mit einem Schaumloeffel rausnehmen, abtropfen lassen. Auf einer vorgewaermten Platte anrichten. Warm stellen, bis all Kloesse fertig sind.

7. Tomaten waschen, vierteln. Stengelansaetze rausschnieden. Kloesse mit Tomaten-vierteln garniert sofort servieren.

Zubereitung 60 Minuten. Vorbereitung 20 Minuten

Kartoffelkloesse halb und halb

Ingredients:
1500 g potatoes (about 10-12 med potatoes)
170 g flour (about 1 1/3 C)
flour for forming
2 eggs
1 1/2 L water (for cooking)
3 (180g) tomatoes (garnish)

1. Peel and wash potatoes. Throw 1/2 in a bowl and cover with water and set to the side. Put the rest in a pan with salted water and let cook covered for 20 minutes. Drain the water and let the potatoes sit and cool.

2. Grate the raw potatoes and put in a bowl. Then grate the cooked potatoes too and add to the bowl. Take 2 T away from the flour and place on a plate. Mix the rest in with the potatoes.

3. Add the eggs and a bit of salt. Heat a pan of lightly salted water. Cover hands with flour and use hands to form 5 cm in diameter balls of the potatoes. Roll in flour on plate.

4. Cook in lightly boiling/simmering water for 20 minutes. Take out with a plastic slotted spoon and let drip and set on a warmed plate until all kloesse are cooked.

5. Wash tomatoes and cut into fourths. Garnish and serve immediately.

Prep time 60 minutes. Cook time 20 minutes.

Calderon's Empanadas

Teig Zutaten:
500 g Mehl (ungefahr 2 1/8 C)
1/2 C Butter
1 tsp Salz
1 prize Zucker
1/2 C Wasser (vielleicht bischen mehr?

1.  Vermischen zusammen bis es gemischt und ein Teig. (mix together until forms a dough)
2. Roll out and cut into circles about 3 inches in diameter. Place a bit of fillings on one side and fold other side over and seal with a fork at edges.
3. Cook in oil at a low simmer until brown. The insides cook slowly so do not have oil too hot.
4. Sprinkle with granulated sugar once done and still warm.

Darein:
boiled eggs
raisins
green olives
meat mixture

Meat Mixture:
2 poppyseed Brotchen (torn into pieces)
1/3 C Milch
1-3 Prise Zucker
2 Haehnchen thighs (cooked and shredded, cold)
1/2 Grune Paprika (diced finely)
2 kleine Zwiebeln (diced finely)
1 T Butter
3 cloves Knoblauch
1 1/2 Boullion cubes (chicken)

1. Soak bread in milk and sugar. Saute onion in Pfanne with butter. Add chicken, mix and stir. Add bouillon and just a little water to dissolve it and mix altogether.
2. Add Krauter, Jod Salz, Muskatnuss, Tomato spice, Pfeffer, and 1 Lorbeer to mixture. Simmer x 10 minutes on low.
3. Remove from heat, remove Lorbeer and ready to use as filling.

Hauswaffeln

Zutaten:
250 g Butter
175 g Zucker
2 Packchen Vanille Zucker
6 Eier
1 Prise Salz
500 g Weizenmehl
3 gestrichene Teeloeffel Backpulver
1/2 L Milch

Einen Ruehrteig herstellen
Das Fett darf nich fluessig gemacht werden.
Der Teig soll dick fluessig vom Loeffel fallen.

Daniella's Pfannkuchen

500 g Mehl
8 Eier
1-2 prise Salz
50-100 g zucker
300-500 mL Wasser

Mehr oder weniger Wasser. Wie Sie die lieber haben, zucker auch.

Pfannkuchen

Ingredients:
1 L Milch
2 Eier
1 T backpulver
1 packchen vanilla zucker (about 1 T)
 Mehl

Alle Zutaten (ausser Mehl) in eine Schuessel geben und gut vermischen. Dann geben Sie Mehl dazu bis es "thicker but still runny" ist.

Toppings:
Sauer Sahne
Marmalade
Zucker

Jogurtkuchen

Zutaten:
300 grams Zucker
4 Eier
1 pkt Vanille Zucker
1 Becher Joghurt
1 Becher Oel
350 grams Mehl
1 pkt Backpulver
50 grams Schokoflocken

Alle Zutaten in eine Schussel geben und gut vermischen.

Bachen um 175 grad fuer 60 minuten.

Sauerkraut (english)

Ingredients:
1 can/jar of sauerkraut
1/2 can/jar of water
2 bay leaves
4 juniper berries
1 tsp. salz
2 onions, finely diced
pepper
1/4 C. Crisco
5-7 slices of bacon, chopped

Cook sauerkraut, water, bay leaves, and juniper berries together in a pan for 10 minutes then drain water and remove food from pan.

 Heat Crisco in pan on medium heat and add bacon and onion. Cook til onions are soft and bacon is browned.

Add sauerkraut mixture and cook til flavors are mixed.

Sauerkraut (german)

Zutaten:
1 Dose Sauerkraut
1/2 Dose Wasser
2 Lorbeerblaetter
4 Wacholderbeeren
1 Teeloeffel Salz
Pfeffer
1/4 cup Schmalz oder Crisco
2 mittelgrosse Zwiebeln

In einer Pfanne, 1 Dose Sauerkraut, 1/2 Dose Wasser, 2 Lorbeerblaetter, 4 Wacholderbeeren zusammen 10 Minuten kochen lassen. Dann das Wasser abgiessen und den Topf wiederauf die Herdplatte stellen.


In einer Pfanne etwas Crisco erhitzen, dann ca. 1 handvoll kleine Speckwuerfel bei mittlerer Hitze anbraten und 2 oder 3 Zwiebeln (in feine Stuecke geschnitten) in Etwas braun in kleine Wuerfel gschnitten- zufuegen und mitbraten, bis alles Etwas braun ist. Zum Sauerkraut geben und gut umruehren und mit Salz und Pfeffer abschmecken.

Servientenklosse (english)

Ingredients:
8 hard rolls, broken into small pieces
2 Tbsp. parsley, finely cut
250 ml. milk
1 onion, diced
50 g butter or margarine
2-3 eggs
80g white flour
salt and nutmeg to taste

Combine roll pieces, diced onion, and parsley and saute in butter. Add milk and allow bread to soak up milk. Mix in flour and beaten eggs.
Season to taste with salt and nutmeg and mix well until appears doughlike.
Form into a long loaf and place loaf on a kitchen dishtowel. Roll dough up in towel and secure both ends with an elastic or something.
Place dough in towel in boiling salt water and simmer for 30 minutes.
Slice to serve.

Serviertenklosse (german)

Zutaten:
8 Brotchen
2 Esl Petersilie
250 ml Milch
1 Zwiebel
50 g. Butter oder Magarine
2-3 Eier
80 g. Weizenmehl
zum wuerzen Salz und Musskatnuss

Die Brotchen in Wuerfel schneiden und mit der fein gehackter Zwiebel und der feingehackten Petersilie in dem erhitzten Fett roesten. Dann mit Milch uebergiessen und weich werden lassen. Die Eier und das Mehl darunter ruehen mit Salz und Muskatnuss abschmecken. Alles zu einem geschmeidigen Teig verarbeiten. Ein Kuechentuch ausbreiten. Den Teig in der Form einer longen Wuerst auf das Tuch legen und das das andere Tuch Ende darube schlagen und an beiden Enden Zubinden. In einem Topf mit kochenlem Salz Wasser hineinlagen und 30 Min. ziehen lassen. Dann in Scheiben Schneiden.

Sauerbraten (english)

Ingredients:
1 kg. beef
Pepper and salt to taste
1 onion
250 ml. broth
2 brown soup packets (Delikatess)

(for the marinade)
1 onion
4 peppercorns
4 juniper berries
2 bay leafs
1 clove
250 ml vinegar
250 ml water

To marinade:
Dice onion. Pat meat dry and place in a bowl or plastic bag. Add spices, onion, vinegar, and water. Place in fridge for 2-4 days turning frequently.

To cook:
Remove meat from bag and pat dry with paper towel. Sprinkle with pepper. Brown all sides of meat, then add onion, broth, and sauce packets. Cook for 1 1/2 hours.

Sauerbraten (german)

Ingredients:
1 kg. Rindfleisch
Pfeffer u. Salz zum Wuerzen
1 Zwiebel
250 ml klare Bruehe
2 Delelikatess Sosse zum braten

(fuer die Marinade)
1 Zwiebel
4 Pfefferkoerner
4 Wacholderbeeren
2 Lorbeerblatter
1 Nelke
250 ml. Essig
250 ml. Wasser

Zum Marinieren:
Zwiebel in Scheiben schneiden. Das gewaschne und gut abgetrophte Fleisch in eine Schirrel legen die gewuerze und in Scheiben geschnittene Zwiebel dazu alles mit dem Wasser und Essig ueber giessen und 2-4 Tage im Kuhlschrank ziehen lassen. Das Fleisch oeften wenden.

Zum Kochen:

Das genuegend gesauerte Fleisch gut abtrocknen und mit Pfeffer wuerzen. Von allen Secten braun anbraten danach Salzen, die Zwiebel wuerfeln und mit anbraten allen mit der Braten sosse und der klaren Bruehe abloeschen.

Flussigkeit von der Marinade noch geschmak dazugeben und alles 1 1/2 Stunde Schmorenlassen.
