Jicama Salad

from Aunt Nan

Ingredients:
1 head of red leaf lettuce
1/2 bermuda onion (or less), sliced and cut in half
1 can mandarin oranges, drained
1 small jicama, peeled and diced
4 oz carmelized almonds

Dressing:
1/2 tsp orange peel
1/3 C orange juice, fresh
2 T red wine vinegar
1/4 C oil
2 T sugar
1 T dry Good Seas. Italian dressing mix

1. Toss salad and add dressing shortly before serving.
